Palate & Pedagogy was founded by Stephen Staples, an educator and sensory specialist whose career has taken a deliberate path: from the classroom to the cellar, and back again.
Trained as a teacher and educated to university level in education, Stephen spent years in the classroom before moving into the food and beverage industry, working across wine, beer, spirits and food with a focus on the sensory experience that underpins them all. That immersion in flavour science, tasting methodology, and product knowledge gave him something most course creators lack: genuine expertise in the subject matter.
More recently, he has channelled that expertise back into education, designing and delivering online learning for industry clients and learners globally. The result is a rare combination: someone who understands what it actually means to taste, and who knows how to turn that understanding into learning that sticks.
